BREAKFAST OMELET MUFFINS
Ingredients:
10 eggs
1/2 cup spinach
1 small onion
half a red pepper
1 tomato
18 slices of ham
salt
seasonings
Method:
Chop up the onion and saute in a frying pan until it’s caramelized.
Chop the tomato, pepper, and ham into small pieces.
In a large bowl, beat the eggs.
Stir in the onion, tomato, pepper, spinach and ham.
Add a bit of salt and Italian seasoning to taste.
Fill 14 muffin cups nearly to the top.
Cook in a 200 degree oven for 20-25 minutes–just make sure they don’t burn!
