What if the winner only wants one pair? Would you allow to only give them the one pair and keep the other?

The winner at this point is only getting 1 pair which is the pair on the left side of the picture if the bids go to at least 1500 then the winner would get both pairs but if the bids go over 1500 and you only want one pair then sure you could have the choice
