what does Changeling or being all monster types do?

If there are effects in play like all goblins get +1/+1, or all slivers get lifelink, the changeling would get those bonuses too since it counts as all creature types. Or with an enchantment like Alpha Status, where the enchanted creature gets +2/+2 for each creature in play that it shares a creature type with, it would get the bonus from every creature in play!

does it also mean flying death touch or for every creature on the battle field it gets plus 1/1 like Crusader of Odric for every creature on there side of the battle field?

Changelings are every creature type in Magic, but being a changeling grants no special abilities by itself.
A changeling will gain any ability granted by another permanent in play that specifies a creature type.
For example, in a Sliver deck, it would count as a Sliver and gain all of the abilities granted to it by the other Slivers.
Or if Changeling Titan was in your graveyard and a card was played that said "Return all Zombies from all graveyards to the Battlefield," it would return from the grave along with all the other Zombies.
Or if you played a card that said search your library for an elf and put it into your hand, you could search your library for a changeling.
