I made this carrot cake for my husband's birthday and it was amazingly delicious and moist. I followed the recipe almost exactly with the exception of using the pineapple only on the top layer to appease my son who is not a big pineapple fan. However, everyone else thought the pineapple was a perfect complement and I think next time I will try it over both layers. I also followed the advice of another reviewer and halved the recipe for the icing to cut down on calories. It worked out perfectly with just enough to do the two layers. I will definitely be making this again.
