do you have to stake those as they get taller?

you can stake them , i do not usually have too , once they start growing i build ythe dirt up several inches to help support the root , also growing them close together , 10 inches or so , they help support each other , mine were not supported this year , were grown in a new loose raised bed , i did not get them planted till july 16th , they still got about 8-10 feet tall, they grow fast, i like just scattering then instead of rows then covering about 1 -2 inches witj=h loose soil and a good watering
