Works with all meats, including game.
My Dad was an old world Italian and loved to hunt and fish. Believe me he ate everything,,,the man would never have starved to death. As a child growing up we always were a bit wary when Dad was cooking?/ ever eat black bird gravy? Hmmmm…yup. But he knew how to preserve meat.

Anyway this is for the Jerky…adapted for a Dehydrator, but can also be used in the oven.

sorry..I don't have any made up yet.

usually I start around thanksgiving and give them out around xmas.
I make about 50 lbs. at a time. I also need to wait for deer season to start.I make a lot of venison meat too. you have to remember you will lose a lot of water weight by evaporation. you will only get 1/4 lb. of jerky for each 1 lb. of meat. I tend to buy roasts, and using my slicing machine, cut up all the meat at one time.
I make 3 types...
1. regular,
2. heavy on the cracked pepper, and
3. heavy on the hot sauce or cayenne pepper.

I marinade for at least 24 hours or longer. and packaging in 4oz.lots as gifts,
(about the same size as when you buy it in a store.)
I really do not ship this out to anyone as to do so would involve all kinds of FDA guidelines and commercial insurance.
It is very easy to make...just don't rush it.
it keeps well...but usually thats not a problem...it gos fast
