Chimichangas are one of my favorite Mexican dishes. You can fill them with chicken, pork, beef, or make them meat free using roasted vegetables. Leftovers are often transformed at our house into a completely different dish to keep things interesting and my budget on track. One night for dinner using left over pot roast, I decided to grill the chimichanga's instead of deep frying or pan frying them, for a lighter take on this dish. I used my grill pan, and grilled them right on top of my stove. My family thought I had invented a new dish for our weekly fiesta. They're lighter but, crispy, golden and delicious, and no extra oil required!
