yes you can. The pot can be set to hot to melt ten turned to warm to keep the chocolate liquidy.

I got 3 as gifts when I graduated Pastry school. I only needed 1 with the second for backup. They are great. Have used them for nachos during the game, chocolate with fruit. I even used it to melt chocolate when making modeling chocolate. Works great and does not burn!
