Remarkably the deep purple shells - a shade resembling the dark-skinned Shiraz grape grown primarily for producing powerful red wines - contain regular-looking green peas inside and can be eaten like any ordinary snow pea. The colourful pea pods are naturally rich in anthocyanin, an antioxidant pigment, which gives them a striking purple color.
Attractive pods avg. 2 3/4-3" and are best harvested promptly. Larger pods become somewhat bitter, and the color will diminish to a mottled purple. Best used raw in salads or slightly sautéed. The color will become "muddy" if blanched or oversautéed.
Peas are a cool weather crop. Midsummer pickings are not as prolific as earlier harvests. For best yields ensure adequate fertility and a pH of 6.0-7.5. Plant the first sowing in early spring as soon as the soil can be worked. In well-drained soil, sow 1-1 1/2" apart in a 3" band (25 seeds/ft.), 1/2-1" deep. Do not thin.
