This Chinese spinach or amaranth (Yin Tsai) is not only nutritious for you but will also look nice in your garden. The leaves and seeds are edible. You could use the leaves in substitute of spinach and the seeds in your soup.

This vege is very easy to grow and they reseed easily the next year. The seeds are very small.
This is a chinese recipe that i like to use for amaranth leaves.
1) prepare your chicken soup.
2) when the soup is boiling, switch off the stove. Add the leaves and drop and egg in the pot. Quckly stir it with a fork or chopsticks. Cover for 5 mins. Serve hot.
The leaves retain most of the vitamins if you just add them in last without cooking them thoroughly.
All the plants in my garden are organic. We do not use pesticides in our garden nor lawn. The holes in the leaves just show that.
