Squash is native to the Americas. Thought to be the first food cultivated by Native American Indians, squash, along with beans and corn, is part of the Indian triad of the three most important food staples.

Nutrition of Acorn Squash:
In addition to an attractive calorie count, acorn squash also has some of the stuff that the body needs to process other fattier foods. The 9 g of dietary fiber in that 1 cup serving of acorn squash will help the body to deal with the range of foods that you might eat during the day. Unlike some other types of squash, acorn squash has this effective amount of fiber, making it a desirable choice for some diets. With acorn squash, you also get 2 g of protein in the same 1 cup serving, giving your body “fuel” without the cholesterol, saturated fats or other unwanted elements in lots of traditional entrees.

These are easy to grow! Full sun is the ideal lighting environment for growing acorn squash, and they thrive in rich, well-drained soil enhanced with plenty of compost.

I use Acorn Squash to cover unsightly ares of my yard.
I use Ornamental Gourds in the Kids Garden.

I make this with sausage or bacon (turkey is ok) and goodies from the garden like tomatoes, green onions, peppers, basil, etc
This dish is a real show stopper!

Stuffed Acorn Squash

1 acorn squash

1 tsp olive oil

Salt and pepper to taste

2 links Italian or Smoked Sausage, crumbled

½ cup yellow onion, finely chopped

½ cup celery, finely chopped

2 tsps garlic, minced

½ cup fresh spinach, washed and stemmed

½ cup sour cream

¼ mozzarella or parmesan, shredded

bread crumbs

any good cheese to grate on top

Preheat oven to 400 degrees F.

Slice squash in half, lengthwise. Scoop out the insides of the squash with a spoon to create a clean cavity for the stuffing.

Brush squash with olive oil and season with salt and pepper. Bake squash with cut side down on a parchment lined baking sheet. Bake squash until fork tender, which is about 30 minutes.

Meanwhile, brown sausage over medium heat in about a tsp of olive oil. Once browned, set aside. Add 1 more tsp of olive oil to skillet and add onions and celery. Saute until onion becomes translucent. Add garlic and sauté for a minute more. Remove from heat.

In a large bowl, add sausage, onion mixture, spinach, sour cream and cheese. Stir well.

When squash is finished baking, stuff the squash halves evenly with stuffing. Sprinkle the top with bread crumbs and cheddar cheese.

Bake squash at 350 degrees F for 15 minutes until stuffing is heated through and starting to brown on the top.
