Pink-skinned and orange-fleshed, pink banana winter squash (Cucurbita moschata) offers a feast for the eyes as well as taste buds. The elongated vegetables also offer a bounty with every vine, with individual squashes that can grow up to 40 pounds. Grow these sprawling vines in full sun in a roomy garden bed -- they can sprawl several feet in all directions. Like all winter squash, pink bananas are ideal for long storage after harvest.
Prepare the bed just before sowing seed by working a 3-inch layer of compost into the top 6 inches of soil.

Sow seed directly into the garden about three weeks after the last average frost date. Optimally, the soil temperature at planting time will be 60 degrees Fahrenheit, with air temperatures that don't dip below 50 degrees F.

Mound soil to form a hill that is at least 6 inches tall and 20 inches across. Sow squash seeds into the hill at a depth of 2 inches. Space the seeds 4 inches apart. To ensure that you will have two viable plants per hill, sow at least four seeds in each hill. Water the hill lightly. Repeat this process if you are growing additional pink banana squash. Hills should be at least 6 feet apart.

Thin the plants to two seedlings per hill when the seedlings are about 3 inches tall. Choose the hardiest-looking plants, and cut the rest at the soil line.
