*These doll-sized squash look like tiny pumpkins but have the flavor of sweet winter squash, without the stringy texture of pumpkin.
*We've grown mini pumpkins on a wire tunnel so children can crawl under the vines. The vines stay up on the top and the mini-pumpkins hang down through the wires. It's great if you're a little one! Mini-pumpkins require lots of sunshine, plenty of water and enough elbow room to provide good air circulation.
*Wild Rice Stuffed Mini Pumpkins
Serves 4
Tender young pumpkin stuffed with wild rice and cranberries makes for a fun and tasty dish. Serve as a light lunch or with an entrée.
Ingredients
1/2 cup uncooked wild rice
3 to 4 cups water
4 mini pumpkins
Juice of 1 orange
2 teaspoons honey
Salt and pepper to taste
1/4 cup dried cranberries
2 tablespoons chopped pecans
1 teaspoon orange zest
1 teaspoon chopped mint
Method
Preheat oven to 375°F.
In a small sauce pan, add wild rice and fill with enough water to cover and allow room to boil like cooking pasta. Bring to a boil and then simmer for approximately 30 to 40 minutes. Rice is done when it starts to "pop" the grain.
While rice cooks, cut tops off pumpkins. Using a large spoon, scoop out seeds and strings. Place pumpkins upside down in a pan with 1/3 inch of water. Bake for 15 minutes. Carefully turn pumpkins upright and return to oven until flesh is tender when pierced with a fork, about 5 to 10 more minutes.
When rice is cooked, pour into a colander and rinse with cold water. Place the rice in a medium size bowl.
Juice orange and add honey, mixing together. Pour over rice. Add salt and pepper, and stir well. Stir in cranberries, pecans, orange zest and mint. Adjust seasonings if needed. Stuff rice into pumpkins and serve.

I never even knew the minis were edible! I always just use them for decoration. I do alot of cooking and baking with pumpkins, and I'm anxious to try using minis now!

They are all delicious if you pick them small and tender, you can even use them with the blossom attached. American Indians have THE best squash blossom recipes.
I have such sinful recipes for them (cut in half, hollow out, line with butter, garlic and bacon, then filled with cherry tomatos, baked then brown cheese on top, or sprinkle with brown sugar, dab of butter, fill with chopped apples n cinnamon and bake, I could go on forever...garden food rocks!

"ornamental" squash/gourds have been used as food for thousands of years. Blossoms and squash are edible. Best when picked young and tender.

The Turbin Type Pie Squash is good for pies and big enough to get a few pies from each one. Has a rich creamy texture when baked and a sweet potato flavor. After baking the pie squash, I scoop out the tender filling and mix in brown sugar and butter with vanilla. Looks liked mashed sweet potatoes, taste much better.
