Amaranth (Amaranthus hypochondriacus) – Annual - Germ: 3-15 days; Sow: 3/8"; Spacing: 12-24"; Plant before last frost, begin indoors (transplanting when growth has reached 4-8 inches) or direct sow outdoors in fall; Full sun; Height: 24 - 48"; Blooms Mid - Late Summer, Early Fall; Magenta, Fuchsia, Maroon
Valerian (Valeriana officinalis) – Perennial - Germ: 21 days; Sow: 3/8" deep; Early Spring or late Summer/early Fall; cold stratification; Sun to part shade; Spacing: 12"; Height: 48-72"; Blooms White; from June to August; Cut off the Valerian stalks at ground level with a scythe when ready to harvest. The best time is between August and September, preferably in the second year of growth.
