Growing Vidalia onions in your own garden is a great way to add this sweet onion variety into your cooking. Named Georgia’s official state vegetable in 1990, Vidalia onions are the most common type of sweet onion.
Vidalia Onions can be grown in ground, or in planters, in soil that is low in sulfur, as this gives the onions their especially sweet taste.
How to Plant Vidalias
Cool season crops, these onions are best suited for planting in February, and can be started from seed or from sets. Proper seed spacing will allow for maximum onion growth. Ideal depth is ½” for seeds or 1” for sets. Leave 3” between seeds or sets, and 12” to 18” between each row.
Harvesting
Seeds will take three to four months to mature, while sets will take 50 to 60 days. Onion tops will sprout tall, and will fall over naturally when they are ready to be harvested. After harvesting, your onions can be stored at room temperature for up to four months.
If your onion crop does indeed make you cry, try chilling the bulb before cutting to reduce the impact of the sulphuric compounds that cause us to tear up. Then, cut into the layers of your onion and enjoy!
