Adzuki Bean and Honeysuckle Flower Soup (Honeysuckle flower is known for its medicinal goodness, and adzuki bean is also good for keeping us healthy.Boosts immune system. Helps easing off tonsillitis and dry and sore throats.) Ingredients:
50g Adzuki bean, rinsed and soaked for 1 hour 25g Honeysuckle flower 10g Licorice root 1 litre water Rock sugar to taste
Preparation:
Place water and adzuki bean in a large pot, bring to a boil, and continue cooking on medium heat for about 20 minutes. Add in honeysuckle flower and licorice root. Cook for another 10 minutes. Sweeten with rock sugar according to your desired taste. Serve hot or chilled.
Versatility Note:
When having sore throat or mouth ulcers, I usually consume about 500ml to a litre of the soup/drink for up to 5 days. You can use brown sugar instead of rock sugar if you can't get hold of it.
I made this recipe to help me detox and it is great. The celery helps reducing water retention and the adzuki bean and lentil are a great source of protein.
Ingredients:
1 onion 1 carrot 2 stalks of celery 50g adzuki bean (soaked overnight) 50g split peas (soaked overnight) 50g lentils A pinch of black pepper Juice of 1 lemon Some cherry tomatoes 4 cups water
Preparation:
Place the onion, carrot and celery in a pan with 4 cups of boiling water to simmer slightly. Add lentils, beans and water. Simmer on a low heat till beans are cooked thoroughly. Add the lemon juice, the cherry tomatoes and some black pepper.
