Prolific plants are easy to grow and seem to need less heat to ripen than some cucumbers, making this a good choice for cooler climates, too.


Lemon cucumbers are most often used in raw, but may also be cooked or pickled. Use fresh in green salads, or juice into cocktails, and smoothies. Pair with tomatoes, summer squash, carrots, other cucumber varieties, fresh herbs and cheeses, citrus, olives, vinegar.
