This statuesque, anise-flavored perennial lends drama to the garden with lacy fronds ranging in color from deep chocolate-bronze to green with all of the shades in between. Harvest young stalks for soups, herb butters or salads. Fennel seed has umpteen uses; chewing it sweetens the breath and the stomach. To harvest, enclose mature brown seed heads in a paper bag and cut with scissors. Dry and store in a glass jar. Its seed rampantly self-sows and fennel is #1 with “good” garden bugs. Fennel is best raised as transplants sown indoors 6 to 8 weeks prior to setting out after the last spring frost date. In the Pacific Northwest it is a bit aggressive and care should be taken if you are planning to grow. Perennial. Hardiness zones: 5-9. Height: 30" to 36". (OP.)
