The delightful way to cook these small plants is to braise them whole when they reach the 4" size, or cut cleanly in half.

Their flavor is more delicate than western cabbage, so don't overwhelm with a lot of soy sauce or other flavoring. They are delicious fried in veg oil, grilled, in soups, stir fries, eaten like celery, etc. Let their natural goodness shine! My favourite is to cook with bacon & mushrooms with a dash of vinegar.

Each plant bears 10-14 erect stalks, 8-10" long. Grows best in cool weather. Can be grown as a spring or fall crop.

While not as sensitive to heat or cold as western cabbage, spring crops may bolt prematurely if young plants are exposed to frost or a week of nighttime temperatures below 50 F. Wait until after last frost date to direct seed or transplant out.

Start transplants inside 4 to 6 weeks before last frost date. Transplant 6 to 12 inches apart in rows 18 to 30 inches apart.

The striking white petioles and green leaves make it a must for edible landscaping. Use it in borders!
