for those you might wanta bring some stacks of twenties.
coin shows typically bring people who know what their coin is worth.
I prefer cherry-picking and buying from people unknowledgeable people.
It's more of a surprise when you find something really nice =]

yeah plus you make tons more $$ by cherrypicking. It takes more time , but several time i have made a killing off one coin. CC Morgans picked up at garage sales for 200$ sold 800$. I deal 90% in silver/gold coinage. I just like that phone call when someone says they have this "gold coin with a lady holding a torch on the front"......
How do you cherry pick?

mostly by grade. i like to buy mint state coins that I know are undergradded. alot of time sellers overgrade their coins but every once in a while you can get some ms 65 66 coins that are sold at ms 63 prices due to undergrade. my favorite deal was 3 " urcirculate gold plated dimes" that i purchased for around 40 bucks...they were $5 gold eagles!!!

^rofl!!! 5$ gold eagles are like 250$ in gold right?
i cherry pick from piles and piles of face value coins for that one awesome one. or that rare year. i try not to keep unc specimens that aren't easy to sell. only really ms coins i have are morgans. Periodically i find double eagles that i can flip , but when you start throwing in 2000$ in one coin you start taking un-needed risks in forgery.
bullion grade coins you can always acid test for metal content, but you can't exactly do that with a fake pcgs holdered gold coin.
i know some people who do what your talking about. More specifically they buy third party graded coins that are "ms68" au 50s. for the xf or vf price. Then they pay for pcgs or ngc. That is a lot of confidence in your grading skills though. I just don't want to risk my $$ on someones word or my eye that i am going to catch the most minute cleaning that pcgs will...
funniest thing i ever saw was a spot the fake game. They had 19 fake saint gaudens and 1 real one. It was so funny watching the "experts" fail it every time.
