I am offering fresh roots for growing them into plants! Usually after you harvest the roots, you should clean them up, peel the skin (like in ginger), dry them up and powder. This will keep for months together without getting spoiled. With fresh roots, you can make a paste and rub them while marinating meat and fish and even veggies, but they won't keep for long like the dry powder. Probably you can try freezing the paste in ice cube trays. I have never done that. We make a pickle with raw turmeric and its too good!
