"Huckleberry pie filling tastes just like blueberry pie without the effect of staining your teeth. As a member of the nightshade family (like Tomato), it is extremely easy to grow ~~!! Great substitute for blueberry as it does not require specific low soil pH and is virtually maintenance free.

PLANTING INSTRUCTION: Sow seeds indoors in early spring in Jiffy 7. Place seeds 1/4" deep. Germinate at 70F for about 14 days or until emerged. Transplant outdoors after all danger of frost is past. Space plants 20" apart.

HUCKLEBERRY PIE
4 cups garden huckleberries
2 tablespoons granulated tapioca
1 cup sugar
1/8 Teaspoon salt
1 tablespoon lemon juice
1 tablespoon butter

Directions:
Hull and wash berries. Bring a pot of water to a boil. Add berries and 1 tsp. of baking soda. Boil 1 minute and drain off water. This process will remove bitterness. Mix tapioca, sugar and salt together and sprinkle over berries. Add lemon juice. Line 9 in./23 cm pie plate with pastry and pour in berry mixture. Dot with butter. Cover with top crust. Bake at 450°F/210°C for 10 minutes then reduce to 350°F/160°C for 45 minutes.
