These are last seasons seed, so they will still be good for planting for 2-5 more years, depending on how you store them.

The Pepperoncini (aka; Stavros) Pepper is a classic and now rare, Greek heirloom pepper. It took me a long time to find these seeds. These are not the same as the Italian variety, which is much more cylindrical and longer.

This is a medium-long and somewhat square shaped pepper, that turns red when fully ripe. It has a wonderful spicy-sweet flavor that makes this pepper the best pickling pepper ever. Used the traditional way, they are picked while young (still greenish yellow) for pickling or can be left to mature for fresh use. Organic!

75 Days to maturity. Easy to grow.

Seed Collecting:
Allow pods to dry on plant; break open to collect seeds.

Do you know how to pickle these? I've seen a bunch of recipes that vary so much I don't know which one is correct. I would love to win these and try them!

I have a couple of them that I use. I like them slightly sweet, so they wouldn't taste like what you get in the store. How do you like your pepperoncini?

I like the ones you eat with pizza and on salads. Not sweet I suppose. Some recipes I've found use all vinegar. Others use water and vinegar. Some use water bath method and some say pressure can. I've also found some that recommend a fermentation method. It's all so confusing!

Here's one that is easy & tastes good:

In pint jars 2-3 cloves of garlic sliced
jar packed tight with peppers
1 teaspoon pickling salt
1 teaspoon sugar
heat lids in warm water just to a boil
screw on lids and let sit for about a month

no hot water bath as long as you use new lids we have never had a problem
