I used to eat these right off the bush....and then the Elderberry Pie. So good. As I got older, then the homemade Elderberry wine..mmmm. These really are good.
American elderberries have a moderate growth rate, growing 6 to 12 feet tall within three years of planting. These plants spread through suckers to become a dense hedge. They typically begin producing fruit within two to three years of planting.
Elderberries grow best in full sun, with slightly acidic, moist, well-draining soil.
Hardy in U.S. Department of Agriculture plant hardiness zones 3 through 9, these handsome landscaping plants grow quickly when given the right conditions. They have a gentle, arching habit and become a dense hedge after a few years.
Elderberries don't generally need additional fertilizer, but if it show signs, such as pale leaves and slow growth, apply an all-purpose fertilizer in the spring. Prune out older canes to the ground in late winter to encourage new growth.
Harvest elderberries in late summer to fall, when the berries become purple to black.
