Turks Cap or Turban Squash
(C. maxima) 90 days A beautiful squash striped in red, orange, green and white. A very old variety from France (pre-1820). Fine thick orange flesh; good sized fruit. Unique.
The colorful skin isn’t edible, only the bright orange pulp inside.
Turban squash is a good source of calcium, phosphorous and vitamin A. Turk’s turban squash is considered so ornamental that people often don’t eat it, using it as a harvest festival decoration, instead. Given it’s shape and the fact that it’s so much smaller than a pumpkin, it’s fun to serve it whole (roasted) and filled with a thick autumn soup or a stuffing of your choice.
Cooking with Turks-Turban Squash: You can either prepare turban squash like butternut squash or scoop out the insides and use it as an edible bowl.
