It depends upon your goal for the end product. These have a relatively high liquid content, which I use for a slicer or freeze for soups. For canning I tend to use a more dense tomato--like a roma or a paste tomato, but you could definitely can these if you cut them up after skinning (they're way too big to fit into a wide mouth whole).

Thank you very much.... I do always dice up my tomatoes, soup, stew, chili ready, but really wanted a red tomato... thanks so much.
