A classic bean from Peru, the Mayocoba is a small but meaty thin-skinned bean that will take on all the flavors you can throw at it, and still hold its shape. Many people say it’s great as a substitute for Cannellini or great Northern beans. I usually use it in substitution for pintos, as the yellow beans are much like pintos but creamier and meatier. These beans are considered the King of Beans by Latin chefs because its texture and rich and buttery flavor. They also don’t give you gas!
These are incredibly easy to grow. They have a mostly bush habit and do not require trellising. These can double as a green bean, but I save all my Mayocobas for dry seed!
