Use the leaves. chopped, as a fresh herb in salads and dips, soups and marinades, & use where you would use regular chives. These have a more garlic-y flavor without the bite of fresh garlic, mellower.
You can even use the yellow leaves that have not been exposed to sun,like under mulch/leaves... this is a delicacy, and tastes more oniony than garlicy.

They can be used fresh, simmered lightly or, chopped and frozen in an airtight container for later use as well. They are very appropriate in chinese cuisine, but are also excellent in egg dishes, and fresh herb bread.
