These are super creamy, meaty and gorgeous beans. If you're new to the heirloom bean world or a seasoned fanatic, and you haven't tried these, drop everything you're doing and try growing these for their rich and velvety soup broth. You will enjoy them immensely.
Thought to be originally from Colombia and then bred in Italy,Cranberry beans are thin skinned and create a soft and dense texture.
Cranberry beans are a shell bean prized for their maroon-speckled beans and compact, erect growth habit. As annuals, they will grow in most areas with few problems, although they require at least 75 frost-free days to produce a mature crop Cranberry beans must be planted at the right time of year and under the correct soil, light and moisture conditions to perform their best. In addition, the seeds must be planted directly in the garden rather than in starter pots since cranberry beans do not transplant well.
Sow seeds at a depth of 1 inch. Space the seeds 2 inches apart in rows spaced 20 inches apart.
May grow over 3 ft and will need some support.
Beans are grown to full maturity, usually harvested in fall after the pods have matured and the leaves of the plant have dried and fallen. Dried beans can be stored in a cool, dry place for up to a year or more.
Grown in Kentucky's clay soil in zone 6.

It isn’t mandatory to soak dried beans before cooking them, but soaked beans do cook more quickly and evenly and are easier to digest. There are two ways to soak dried beans: A cold (long) soak, which guarantees fully hydrated beans, or a hot (quick) soak, which is speedier but leaves the possibility that some beans won’t be fully hydrated and may therefore not cook as evenly.

Spread the beans out and pick through them, discarding any rocks, bits of debris, and shriveled beans. Then rinse the beans under cold water to remove any dust or dirt.

For a cold (long) soak: Put the beans in a large metal bowl with enough cool water to cover by about 3-inches. Soak at room temperature for six to eight hours, adding more water if the level gets low. Drain and rinse before cooking.

For a hot (short) soak: Put the beans in a large pot with enough cool water to cover by about 3-inches. Bring to a boil; boil for two minutes. Remove from the heat, cover, and let stand for one to two hours. Drain and rinse before cooking.
