Most of these casseroles, stir-fries, pasta dishes, skillet suppers, salads and soups can be whipped up in 45 minutes or less, say the editors, and some can be turned out in under 15 minutes. Both prep and cooking times are given for each dish, as are calories, fat content, sodium, etc. The sophisticated palate is accommodated with such spices as coriander, curry powder and fresh ginger. On the other hand, to facilitate swift passage through the kitchen, the editors make use of prepared ingredients such as instant potatoes, canned or frozen vegetables, stuffing mix, biscuit mix and ready-made pizza crust. Consequently, purists will turn noses up at some of the recipes.... Accompanying notes tell which recipes are good for freezing leftovers or brown-bagging. Others underscore healthful virtues of natural foods.
