This is a very mild flavored, bi-color eggplant and fairly prolific. A bit smaller than it's dark purple cousins, it is just right to serve 1 or 2 people as a side dish. I personally prefer the smaller versions of most vegies, they are usually more tender and seeds aren't as much of a problem. I've even tried this in making individual eggplant lasagnas and it was absolutely wonderful!
