The texture of this gourd is crisp even after a long period of cooking, very crunch if eat raw but need to wash it thoroughly.
Sweet taste akin to between winter melon and yellow noodles melon but more on winter melon's size. very good for shark fin substitute.

Shark fin gourd, can growth to 23" long and 27" in diameter

Soaks seed in warm water for 4 hours then plant it in potting soil. Seeds will germinated 2-7 days, or direct sow seeds (3) in a well drain soil in spring 8" apart.

This is a large vine, if you wanted to grow it on trellis then requires support and space, up to 10'X10' for a fully grown plant.
Usually let grown on ground as water melon.
Full sun, sow seed in early spring for Summer harvest, late spring for fall harvest. 90-120 days.
Temperature should be above 60F at night when sow seed. Will turns into annual in US Growth Zone 9 and above.
