Vates is a variety that is common here in the south, mainly because it is not only one of the tastiest varieties, it is also drought tolerant and slow to bolt. I know I'm a little weird, but I like to harvest the leaves young and lightly saute them with a bit of garlic, onion and a little olive oil. YUMMM! Of course, a longer cooking with whatever kind of pork you take a liking to never hurt 'em much either!
