Chocolate Mayonnaise Cake. Because mayonnaise contains egg yolks, oil, and lemon juice, it makes the perfect beginning for a cake batter. Chocolate Mayonnaise Cake is a product of the 1940's when eggs and oil were being rationed during WWII. Using mayo instead of these two ingredients was the way to enjoy an unbelievably moist cake.Our original recipe calls for chocolate icing, but we also include a second icing recipe for those who prefer less chocolate. (Are there really such people????)
