Google says all amaranthus is edible. I grew these and they are beautiful.

I have grown a couple types, not as pretty, and the leaves taste a lot like spinach. great in pan with a little olive oil and garlic!

i fell rescuing some chickens someone dumped on the road and broke my shoulder in 3 places and it is hard to type with one hand. these are very pretty, didn't know they were edible
