Hey, there, sweet lady sourdough queen of the south east! I still haven’t had a chance to make any bread my daughter and her two-year-old and an eight-month-old keep us busy around the clock LOL she did bring her KitchenAid mixer here I wonder if we could use that? Hope you are well and enjoying the spring! It is 50 here today :-)

No to using the kitchen aid. Use non reactive for sourdough.
Read my instructions. No reason to use mixer.

Mix flour and water with silicon or wooden spoon. Let rest. Only takes a minute.
Then when you have sour dough ready you just mix for a minute to combined flour, water
Kneading is so simple and it only takes a few minutes.
It helps to feel texture as you slowly add the flour.
There's a guy in Florida, just saw on you tube, he makes sourdough for a restaurant. He has the wooden dough bowl . I'm jealous, I want the wooden dough bowl. Lol

Watch you tube, if it helps. Never allow metal anything to come in contact with sour dough.
Oh, a friend uses wide mouth canning jar for the sour dough starter. She places a piece of plastic wrap over it. It makes a gas, hooch, so you don't want as lid. You stir it if a clear liquid forms on top. That's good.

I have a kitchen aid. Love it ! I've been picking up accessories for it over the years. I use it for cakes, egg whites, and mashed potatoes. Lol
I recall when Hobart owned it. That's why you can still find them at estate sales, auctions, and antique stores. Commercial grade sold to the public ♡
