I have pulled recipes off line for different type's of stuffing for stuffed peppers and cut them up and use as I would bell pepper.

how many peppers will there be per seed?

This falls crop I started 10 seeds and have gotten 8 sprouts. Last spring I started 10 seeds and got 10 plants. Off those 10 plants I got somewhere between 15 and 20 peppers off of each plant. And that's not counting what the rabbits got.

How many different colors to the peppes go through as they mature?

From green to red. They are not as colorful as some peppers.
