Monodica Charantia is also called bitter melon, bitter gourd, and bitter squash.
It is prized in Africa, Asia, and the Caribbean as much for its reputed medicinal properties ( everything from malaria, diabetes, and a half dozen viruses, among others) as it is for eating.
When consumed green or just turning yellow the fruit is bitter, with a crunchy skin and watery interior like a cucumber.
When it turns ripe, the skin hardens and becomes the most bitter thing you'll ever taste but the pith and seeds become extremely sweet.
