Whether it be for creating a gourmet meal, a healing tea, or a fragrant potpourri, growing herbs in your garden or on your windowsill will give you great pleasure and beauty.

PLANTING : Herbs require well-drained, well-cultivated soil in full sun to part shade. Most annual and biennial herbs may be sown directly into the garden in mid-spring. Sow thinly, about ¼ inch deep, cover lightly and tamp down to firm the row. Thin plants as necessary when 1" - 2" high. Most perennial herbs should be started indoors. Provide adequate water to prevent the seed bed from drying out. Do not overwater -- keeping the soil just moist is just right. Using a water mist is recommended until seeds germinate and their sprouts are seen.

HARVEST : Generally, for best foliar growth, pinch off terminal buds to encourage the plants to become more bushy. Harvest leaves before blossoms develop, gathering the youngest leaves for the finest flavour. Most herbs may be used either fresh, dried or frozen. To harvest seed -- such as anise, cumin, caraway, coriander, dill, sesame -- flower heads must develop fully and seeds or pods should be mature. Dry the seedheads on a plate or in a bowl for 2 - 3 days, then rub to hull the seeds, and store in airtight containers.

STORAGE : Pick and hang herbs in a warm, dry location with good air circulation. When dry, rub off the leaves and store them. Left over stems are good to break up and add to your compost.
