A friend of mine gave me a few acorn squash from her garden this year, and there are too many seeds for me! I forgot to take a picture before I cut them up, but this is what they looked like. They are small, about 1-2lbs each, and are hollow just like other squashes, with lots of seeds. They have a lot of tasty yellow flesh, and are great roasted or in soups. Stuffed acorn squash is super tasty too!
