Ingredients/Tools needed:
2 Large Potatoes washed and wrapped in plastic wrap and cooked in the microwave for at least 10 minutes. (take a knife and put three cuts in the potatoes before you wrap them so they can let some of the steam out.)
1/4 cup cheddar cheese
1/4 cup provolone cheese
fresh chives
1 slice bacon cooked and finely diced
1 small red onion finely diced
1-2 cloves of garlic finely diced
2 Tablespoons of fresh parsley
1/4 cup of butter
1/8 cup of sour cream
Heavy cream or milk just a dash
1 sheet tray wrapped in aluminum foil and then sprayed with pan spray
Large Bowl
Wire whisk
Cup of Ice water with a spoon inside it
Directions:
Preheat oven to 400 degrees.
Cook potatoes according to directions above
Slice in half lengthwise
Remove spoon from ice water and scoop out the insides of the potato leaving some potato but creating a well, take the scooped potatoes and add to the large bowl then add all the above ingredients in with the bowl and mix until it looks like mashed potatoes then remove and place back in the shell of the potatoes. Top with a small dash of cheddar cheese and place in the oven for about 10 minutes or until the cheese on top is bubbling.
