San Marzano Tomatoes, a variety of plum tomatoes, are considered by many chefs to be the best paste tomatoes in the world.
As the most famous plum tomato for making sauce, the San Marzano is preferred by gourmet chefs and cooks all over the world. In Italy and elsewhere in Europe, they are a household name.
In the United States, San Marzano tomatoes are the genetic base for another popular paste tomato, the Roma Tomato. The Roma is a cross between a San Marzano and two other varieties one of which was also a San Marzano hybrid and was introduced by the Agricultural Research Service in 1955.
The tomato itself has some unique properties that lend to it's flavor, which include a distinctive sweet flavor that when cooked into sauce, really comes to life. High density and pectin cause the sauce to be thicker. San Marzano tomatoes have very few seeds in comparison with paste tomatoes, as well as bright red color and easiness to peel.

The San Marzano vines are indeterminate and have a somewhat longer season than other paste tomato varieties, making them particularly suitable for warmer climates. As is typical of heirloom plants, the San Marzano tomato is an open-pollinated variety that breeds true from generation to generation, making seed saving practical for the home gardener and farmers.

Thank you! They are really delicious, I made a variety of delicious sauces this year, and canned a lot of quarts, they are very prolific! They did really well here in Indiana even with the drought. I love heirloom seeds too, it is such a relief to find them, because I am strongly opposed to GMO's! I think gmos are going to kill us all, lol.
