Inulin is a polysaccharides, or starch, that is handled by the body differently from other sugars. In fact, inulin is not utilized by the body for energy metabolism. This makes Jerusalem artichokes extremely beneficial to diabetics. In fact, Jerusalem artichoke polysaccharides have actually been shown to improve blood sugar control. Since the body does not utilize the primary carbohydrate of Jerusalem artichoke, the calorie content is virtually nil, only 7 calories per 100 grams (roughly 3 1/2 ounces).

Do you know if the "greens" are poisonous? I know they'er not part of the potato/morning glory family but in Africa I ate something they called "potato greens" POTATO GREENS ARE POISONOUS TO ALL READING, but I'm trying to find out if this could have been what I ate (and didn't get sick) thank you!

No, they are not. The groundhogs love the leaves, lol.
We don't eat the leaves just the tubers. and these are not potato. They taste some what like potato and not in the same family.
