This is one of the most delicious recipes for sauerkraut salad you will ever try. Not only is it easy to make, but colorful and keeps well, too. Our Aunt Sue made this 60-70 years ago. She brought it to all the family weddings (ours included), showers, picnics, family reunions, you-name it. Try it on pulled pork sandwiches, steak, with chicken, by itself, stuffed in a tomato on a bed of lettuce. Our sons and their families love it and whenever I ask what to bring, overwhelmingly, the answer is "Aunt Sue's sauerkraut salad. It is not sour and salt, but sweet, crunchy and colorful, has lots of fresh veggies in it If you win it, I will mail you the recipe card (one of many requested by friends and family) unless you would rather I send it to your email. Sounds wonderful. I love sauerkraut. Have you ever tried that Bavarian Sauerkraut from the store? It isn't sour. It is sweet and a wonderful change from the regular, but other than the sauerkraut caraway seeds is all you'll find in it. No veggies. I'd love the recipe, sure hope I win!

This is the best sauerkraut salad you will ever eat! It lasts for days in the fridge, is swett, tastes great on pulled pork sandwich, it is basically sweet, veggies are crunchy and my mouth is watering, just thinking of it. Whenever I go to family or church potluck dinners, I make it and take five or six copies of the recipe, too. Good luck!

I love sauerkraut, almost any way it's fixed. Have you ever heard of this, brown a beef brisket, cover it with sauerkraut and onion slices and bake at 325 degrees in the oven for about 3 hours, covered tightly? My mom-in-law made this for my hubby when she was still alive. Sooooo good!
